Expect to see high-quality local names like Greensand Ridge, Chapel Down, Copper Rivet, Maidstone Distillery and Canterbury Distillery on the menu. Fevertree mixers are selected especially to complement the nuanced flavours of the gins and spirits. Fresh garnishes adorn the cocktails, but when something’s not in season, proprietor Laura Taylor hand-dehydrates selected ingredients to provide authentic, quality produce across the seasons.
